Gajar Matar Pulao (Peas and Carrot Pilaf)

A very easy recipe and a full meal in itself. I love rice in any form and I am a thorough a rice eater. I can simply live on rice for days and hence love to experiment with rice and prefer lots of variations in it. This recipe is very traditional and looks colorful.Best thing about this recipe is that it is pure simplicity, a delicious option but at same time too nutritious.

Ingredients -

  • Basmati Rice – 1 cup
  • Carrots (Gajar) – 2 medium size chopped
  • Green Peas – ½ cup
  • Salt to taste
  • Cumin Seeds – 1 teaspoon
  • Red Chilli Powder – ½ teaspoon
  • Garam Masala – ½ teaspoon
  • Water – 2 cups (double the quantity of rice)
  • Ghee (Clarified Butter) – 1 tablespoon

Method -

Wash the basmati rice in running water nicely and soak for 15 – 20 minutes.

After 20 minutes, drain the water and in a heavy bottom kadai heat ghee for few seconds and add cumin seeds to it. Let is cook for few seconds and then add chopped carrots and peas. Cook the mixture on low flame for about 5 -7 minutes.

Now add the soaked rice along with 2 cups of water, salt, red chilli powder and garam masala. Cover it with a lid and let it cook on low flame till the entire water evaporates or until the rice is done.

Do not stir the rice in between because the rice grains will break. The rice should not be cooked on high flame at all. Your pulao are now ready, serve them with curd and pickles.
