Peanut Chikki (Sweet Groundnut Bars)

What better way to celebrate Makar Sankranti than having delicious home make peanut chikkis and sharing them with your loved ones. I have always been in love with these peanut chikkis ever since I was a child and I can’t control self from eating them even though I know it is full of calories (at times you got to listen just to your taste buds
).
I made these at home for sankranti along with my Til Chikkis (the recipe of which I posted yesterday).
Ingredients -
- Roasted Peanuts - 1 1/2 cups (peeled)
- Jaggery - 3/4 cup
- Ghee - 2 teaspoons
- Cardamom Powder - 1/2 teaspoon
Method -
Take a non stick kadai or a pan and roast the peanuts on low flame. Keep stirring them and when it is roasted then turn off the flame and allow them to cool.
After few minutes when it’s cool remove the skin and gently break the peanut with the help of a rolling-pin ( put the peanuts in a poly bag and roll the pin over the peanuts to break them into parts).
Now, in a heavy bottomed kadai or a pan add ghee and when ghee is little hot you can add jaggery to it and mix well. Allow the Jaggery to melt on low flame, keep stirring continuously and when jaggery changes color to little bit dark (ensure it does not to burn) then add roasted peanuts in it.
Mix well the peanut into the jaggery mixture on low flame by stirring it very well for 1-2 minutes after that turn off the flame.
Keep the greased flat tray or back of the flat plate ready for pouring the hot peanut jaggery mixture. Spread the mixture evenly to make chikkis.When the mixture is poured evenly on the flat greased surface, gently draw horizontal and vertical lines before it cools down. Now allow the mixture to cool and then cut in to square pieces. Your delicious peanut chikkis are ready, store them in air tight container for few days.

lovely looking chikkis. ahhh… wish i had the time to make these goodies on this lohri and sankranti. wish you happy lohri and sankranti… and yes i am going to comment on other posts as well. something i wanted to do for a long time but could not do due to lack of time.
