Lychee Milk Shake Recipe and auction fundraiser for VSPCA
This post is for a great cause, though I am extremely late in talking about it here in my space due to personal commitments. A fellow blogger Richa from Hobby & More has taken up a great initiative to raise some funds for VSPCA – Visakha Society for Protection and Care of Animals, India, an organisation that works for animal welfare since 1996. I apologize Richa for the delay in sharing the fund-raiser info on my space and hoping that she has got a good response for the same.

Richa has been working sincerely on this fund-raiser for about a month now and I really appreciate her efforts to take up such a cause and increase awareness among masses.
Why VSPCA? They work tirelessly to
- to improve the conditions for animals in India and increase awareness.
- provide permanent happy sanctuary to 1300+ dogs, cats, birds, monkeys, horses, rabbits, tortoises, other animals who had been suffering severe abuse or neglect,
- rescue cows and water buffalo from illegal slaughter,
- to stop the illegal trade of internationally protected sea turtles and other wildlife,
- provide Vegan Meals to the poor, especially seniors and children.

Coming back to the mouth-watering lychee milk shake -
Lychee is a fruit that belongs to the family of the scrap berry. One of the most adorable fruit I have ever had…yes!! Lychees, I love having them and so do my kids. We use to have a Lychee tree in our house during our stay in Chandigarh and I still recall plucking fresh Lychees in a basket and having them. The excitement of plucking the lychees was so high and my daughter use to enjoy doing that job. I’ve eaten an insane amount of fresh lychees in my childhood.
My daughter is simply in love with this fruit like me but unfortunately we don’t get real fresh Lychees out here as we use to get in Delhi. So whenever I get to see a nice fresh bunch I usually pick them up knowing we will finish it in no time. Though I have never come across this fruit in abundance, only time I saw lychees in large numbers was when we were blessed to have a huge lychee tree in our house few years back and I still miss that a lot.
Few more days to go for kids summer vacations to get over and then may be my vacations will start
. With my fresh bunches of Lychees I plan to make few yummy recipes and first thing I made was this yummy lychee milk shake to beat the heat. I specially love the Chunks of Lychee and ice in the milkshake. It is so ultra-refreshing.
Before we go to the recipe I would like to share few health benefits of the Lychee Fruit here -
Lychee contains different types of nutrition and vitamins. Most prominent in Lychee is Vitamin C and it also contains other nutrients like Potassium, Phosphorus, Iron, Zinc, Copper, Magnesium, Calcium. Overall this fruit is really good for all but specially kids. It is also low in calories so people like me can eat it guilt free without keeping a count on it :).
Lychee Milk Shake - Quite refreshing!
Ingredients –
- Lychee pulp - 1 1/2 Cups
- Milk - 2 Cups
- Sugar - 2 teaspoon (As per taste , you can use Honey too in this recipe in place of Sugar)
- Crushed ice - Handful
- Whole Lychee - 2 for garnishing
Method –
Remove the cover and de seed the lychees. You would require approx 12 - 15 Lychees. Take a mixer add the lychees and sugar (honey), blend them for few seconds. Check with a spoon and if any lumps still shows, pulse it again once if you like smooth shake (I love few chunks of it in the shake). Now add milk and crushed ice in a mixer and blend till it becomes smooth.
Lychee milkshake is ready, pour in the glasses and serve chilled! Garnish with one full lychee on the top just before you are about to serve.

I ate lychees like crazy in Delhi this time and was lucky to get them here when went for buying veggies so picked 2 bunches of it as we all love eating this fruit. The milkshake was too delicious!
