Vegetable Seviya (Mix Veg Vermicelli)
A day to self after a long dassara┬ávacations of kids got over made me prepare both sweet and namkeen┬áseviya for self and I loved it….. its one of those healthy options I prefer many a times, you can add lots of veggies to it of your choice however I used lots of green peas along with rest of the veggies. Easy and quick to make recipe, best tastes with mint chutney and even tomato ketchup!
Ingredients -
- Vermicelli - 1 cup
- Potatoes - 2 medium
- Green Peas - 1/2 cup
- Onion - 1 large
- Tomatoes - 2 medium
- Carrot - 1 large (I didn’t┬áuse because it was not available in my kitchen while I planned to cook this recipe)
- Salt to taste
- Red chilli Powder - 1/2 teaspoon
- Garam Masala - 1/2 teaspoon
- Oil - 2 tablespoons
Method -
Take a non stick pan, add oil and heat it on medium flame, add onions sliced, potatoes diced to it, saute for about 5 minutes on low flame and add green peas, dry spices to them.
Let it cook on low flame with closed lid for another 7 minutes, stir and check if potatoes and peas are done, then add the tomatoe puree and stir well for few minutes, add vermicelli to it and mix well. Now put water and let it simmer till the vermicelli and veggies absorb entire water.
You can add as many veggies you prefer to this recipe to make it more healthy!

Semiya/Seviya is probably my most favorite breakfast dish and I love it any which way it is made… Especially with lots of mixed veggies and fried cashews on top!
