Prunes & Oats Loaf Cake - High Fibre Recipe

I love eating Prunes and so do my son but he doesn’t like oats at all. I always keep a pack of del monte prunes or california pitted prunes in my refrigerator. Best is whenever I feel something to eat I generally pick up one or two prunes and have it. My kids are really picky eaters and what better way than this to make them eat oats and prunes together, I did not tell my daughter till the entire cake finished that it had prunes because I kept fooling her by saying I made it with dates, though couple of times she did mention “mamma but I can taste prunes in the cake” :) . These days kids are really smart and it’s tough to fool them.

This is the first time I tried prunes in any recipe, else I always eat them as it is from so many years. I tried this recipe without referring to any cookbook or site, just kept the basic recipe of cake that I follow most of the times as it is and added few new ingredients to it, like replaced all-purpose flour to whole wheat flour, added honey and ghee to the cake. It came out too soft and really worth giving a try keeping in mind the health benefits of Prunes and Oats. I added oats into the batter but kept little to spread over the cake too! Do try this healthy combo and trust me you will love it….

Ingredients -

  • Prunes (dried plums) - 10 chopped & pitted
  • Rolled Oats - 1/2 cup (dry roasted)
  • Whole wheat flour - 1 cup plus 2 tablespoons
  • Honey - 1 tablespoon
  • Ghee (Clarified Butter) - 1 teaspoon
  • Eggs - 2
  • Baking Powder - 1 teaspoon
  • Baking Soda - 1/4 teaspoon
  • Salt - a pinch
  • Butter - 1/2 cup
  • Granulated Sugar - 1/2 cup
  • Brown Sugar - 2 tablespoons
  • Vanilla Essence - 1 1/2 teaspoons

Method -

Step by step procedure -

  • Dry roast the oats for 5 minutes on low flame and keep aside.
  • Sieve Whole wheat flour , baking powder, baking soda and salt together in a bowl.
  • Take another bowl add in butter and sugar and mix well with a hand mixer till fluffy.
  • Add eggs to this mixture and mix again with sugar and butter mixture for about 3 minutes.

  • Add vanilla essence to it and mix for about 2 minutes with a hand mixer.
  • Add in honey and ghee to wet mixture and mix.
  • Now gently pour the dry flour mixture into this bowl.
  • Use a spatula this time to gently mix it together.

  • Add in chopped prunes and roasted oats to it.
  • Mix well with a wooden spatula
  • Grease the cake tin, I used the loaf tin for this cake. Dust flour over it.
  • Pour the mixture into the baking tin evenly.
  • Bake it in preheated oven for 35 minutes at 170C.

  • If you feel it’s not done fully, bake for 5 minutes more, check by inserting a knife in the centre, if the knife comes out clean, it means your cake is done.
  • Remove on a wire rack to cool for 10 minutes.
  • Serve it with tea or have it as an anytime snack option.

I think this will be a wonderful team snack for my daughter’s swim team . Coaches won’t say No to this healthy snack and kids will be happy and I can make it the day before.. Now that is a win win all the way!!

Yes I agree with you, kids will love this without making too much fuss….even both my kids swim almost 2 hours a day morng & eveng coz of summer vacations right now and after that they are so much hungry that they want something or the other to eat, I try and give them whatever healthy I can! I am going to try your mango oats smoothie soon for them….

anamika,amazing recipes.the ferrero rocher shake seems to be very nutritious especially for kids who do not like to drink milk. shall definitely try it this week .keep it up dear.
