Lemon Mint Ice Tea Recipe

I have to admit this first that I have been too lazy these days, not blogging frequently also. It’s not that I am not cooking but somehow feel that creativity is somewhat low and it’s just not happening. Sometimes there is no creative impulse to write a post. Every day I plan of trying some new dish or feel like going through the bookmarked recipes but I end up doing simply nothing :) .

Only thing I am really happy and enthu about these days is trying out on various drinks, smoothies, shakes and summer coolers! My kids also love variations in shakes and so do I, so the most happening thing in my kitchen these days is only to do with shakes and various mocktails and I am enjoying it! I am acting too lazy in clicking pics may be due to the summers. I prepare the shake and in few minutes the glasses are empty and later I realise ohhh no ! Why did I not click? But no worries, I guess it happens. I will surely share all the experiments of my kitchen here soon.

I very regularly make this Lemon Mint Ice Tea at home, we all love it and its so refreshing but I have not shared it in my space still just like any tea or coffee post assuming its simple and obviously all would know how to prepare these (though I only knew how to prepare tea when I got married and that too I pity my family members who drank it then without too much of a criticisim….lol).

But then still I need to keep adding anything to everything that cooks in my kitchen out here.So something which is easy, quick and needs no tension is right here…The Lemon Mint Ice Tea for you all to beat the heat this summers :) .

All you need is….

Ingredients -

  • Water - 2 cups plus 1 cup chilled water
  • Sugar - 4 teaspoons ( for more sweetness and little variation you can add 1 teaspoon of Honey too )
  • Mint sprigs - 7 - 8
  • Lemon Flavored tea bags - 2
  • Lemon - 1
  • Big Ice Cubes - 8

Crushed Mint Leaves soaked in Sugar Syrup to prepare the Mint Syrup

Soothing drink for Summers ready in minutes

Let’s see what we need to do for this ultra refreshing Ice Tea….

1. Boil 1 1/2 cup water and add tea bags to it and let it simmer on low to medium flame for 5 -7 minutes. Remove from flame and let it cool completely.

2. Take a saucepan add 1/2 cup water, bring it to boil and sugar to it. Let it simmer till sugar gets dissolved completely, remove from flame, add crushed mint leaves (crush the mint leaves with the help of mortar and pestle or any wooden spatula) to it and allow it to cool completely. Let the mint leaves be in the sugar syrup for an hour or little more, this way you will get a nice mint syrup. The sugar syrup will absorb the mint flavour nicely in it.

3. Cut the lemon into slices and keep few mint leaves for garnishing ready.

4. Take 2 glasses of your choice, add in 4 big ice cubes to each glass, pour mint syrup on top of it, throw few mint leaves and one lemon slice each and add the lemon flavored tea to it. You can adjust strength and sweetness to your taste. If you like strong tea flavour then add little more but if you like light flavour then add about 45 ml of lemon flavored tea to the glass. Pour some chilled water to it.

5. Stir well the mixture with a stirrer and your lemon mint ice tea is ready!!!!

thats a really refreshing drink. the mint leaves are looking so fresh.
i never make ice teas at home. we just end up having these in restaurants. your mint lemon tea is giving me strange creative ideas…. like making mango tea :-)

Thanks Dassana, you can prepare Mango Ice Tea too, I prepare it sometimes during mango season at home, all you need to do is add ripe mango puree and lemon juice to the lemon flavored tea with lots of ice :) , there are many variations to this drink you can also replace mango puree to mango juice….another one to try is peach ice tea..again a yummy summer drink. To all the ice tea I have made and have had mint and lemon are two ingredients that should be always used to enhance the flavor…..

Lemon tea is the best and the great thing about it is that you can have exactly the same thing either hot or cold. In summer I drink the cold type a lot. Sometimes I make it in soda water than plain water just to get the extra fiz. In winter, a warm cup of lemon tea is the best. In both cases, try it with honey only, no sugar - that’s more healthy and best to boost the imune system.

BTW - All the pictures look great. You can be a professional food photographer!
