Gajar Ka Halwa ( Carrot Halwa) - Without Milk
Finally I managed to get deep red gajar in Bangalore and felt too happy, I have always loved Gajar Ka halwa from these deep red gajar because we all have been eating this halwa in Delhi all our lives with these Delhi gajar (as it is called in Bangalore). Though you can prepare this with any form of carrot but I prefer the deep red ones.
This is one north indian dessert that we all love eating in the winters. Generally the halwa is prepared with milk and condensed milk but I make this halwa without milk and trust me it is too delicious with lots of cashew nuts, raisins and almonds.
So without blabbering much, I will pen down the recipe of this yummy North Indian delight.
Ingredients -
- Carrots ( Gajar ) - 1.5 kgs ( grated)
- Sugar - 2 cups
- Ghee or clarified butter - 4 tablespoons
- Cardamom Powder - 1 teaspoon
- Koya - 100 gms
- Nuts - Almonds, cashews, raisins, pistachios ( as per taste )
Method -
Wash and grate the carrots nicely, do not grate the carrots very fine otherwise halwa will turn mushy. Now take a kadai and put the grated carrots in it and stir for few seconds, cover the lid of the kadai and let it cook on low flame for 5-7 minutes, now add sugar to it and stir again, cover the kadai with a lid and let it cook on slow flame for about 10 -15 minutes, keep checking in between and ensure the carrots don’t burn or touch the bottom of the kadai. After adding sugar the carrots will leave water, stir till the entire sugar syrup is absorbed in the carrots.
Now you will see the carrots have left the sides of the kadai, add 2 - 3 tablespoons of ghee, cardamom powder and stir again. Switch off the flame and add crushed koya to it and gently stir.
When you serve the halwa, take a small pan, heat 1 tablespoon of ghee or clarified butter and fry the cashew nut, almonds and the pistachios. Roast till they just start browning .Remove from the ghee and keep aside. Soak the raisins in water for some time. That will make them softer. Add them to your halwa ( I generally add lots of cashews, almonds and raisins and some times pistachios ).
Serve hot and enjoy this special gajar ka halwa with dollops of ghee and nuts!!
