Easy & Quick Aloo Ki Sabzi

What to do when you do not feel like cooking lavish meals or you do not have time to cook at peace due to personal or professional reasons or commitments - Don’t worry this Aloo ki Sabzi will come to your rescue…trust me :) ! It’s an easy quick and hassle-free dish.

I often make these when I am in hurry or at times when I don’t feel like cooking dishes that require a lot of time in the kitchen. We all go through such phases at times and have our own mood swings.

For this dish you don’t require too many ingredients and you can find all of them easily in your own pantry. My son also loves to eat these Aloo and he likes to eat them in the form of wraps. This can go well as lunch box option too both kids and elders would like it. You can also serve them along with Dosa or even as a side dish.

All you need is some medium size potatoes and few dry spices and one or two green chilies and your quick and easy Aloo dish is ready.

Easy & Quick Aloo Ki Sabzi

Ingredients

  • - Aloo (Potatoes) - 4 Medium Size (Nicely washed and chopped into very small pieces)
  • - Mustard Seeds - 1/4 teaspoon
  • - Curry Leaves - 5 - 6
  • - Salt to taste
  • - Turmeric Powder - 1/4 teaspoon (I like to add little more because want more yellow color)
  • - Red Chili Powder - 1/4 teaspoon
  • - Garam Masala - 1/4 teaspoon
  • - Dry Red Chili - 1 or 2
  • - Green Chili - 1 slit into half
  • - Oil - 1 tablespoon
  • - Cumin Seeds - 1/4 teaspoon

Instructions

  1. Take a non stick Kadai, add in oil when the kadai is little hot. Now add in mustard seeds and cumin seeds. When the seeds flutter lower the flame and add in turmeric powder and both the dry red chili and slit green chili and stir again.
  2. Now add in the finely chopped potatoes along with the other dry spices including the salt and curry leaves.
  3. Stir once again and allow to cook by covering the kadai with a lid on low flame.
  4. In between check and stir. Cover again and cook till the Aloo are cooked nicely. The aloo will cook in approx. 10 - 12 minutes.
  5. Serve hot with chapatti, dosa, idli or even rice.
