Beans Aloo ki Sabzi (French beans Potato Mix Veggie)

Beans come in various varieties, they are a rich source of phosphorus, vitamins A, B, D and starch, iron. This recipe is among one of the easy cooking recipes but nutritious because of the green beans ( I prefer adding more quantity of beans to the ratio of potatoes I use to cook this dish).

Ingredients –

  • Potatoes cubed – 3 medium size
  • Beans chopped – 500 grams - you can use any beans ( french beans or broad beans | Sem ki phalli) with same recipe, I used broad beans )
  • Salt to taste
  • Red chilli powder – ½ teaspoon
  • Garam Masala – ½ teaspoon
  • Turmeric Powder – 1 teaspoon
  • Dry coriander Powder – 1 ½ teaspoon
  • Pinch of Hing (asafoetida)
  • Oil – 2 -3 tablespoon

Method –

Wash and cut both potatoes (cubed) and beans (chop the pointed edges from both the sides). Take a heavy bottom kadai, heat oil, add cubed potatoes to it and let it cook on low flame for about 5 minutes with closed lid. Then add chopped beans to it with salt, hing and turmeric powder and let it simmer on medium flame for another 10 minutes, keep checking in between so that the vegetable does not stick to the bottom and burn, gently stir it in-between. Now open the kadai lid and add rest of the spices to it and cook with lid open on low flame for another 7 minutes. Check with fork or knife if potatoes are done by now (which I am sure will be cooked by now) just in case if not, then cover it again and cook for another 5 minutes (sometimes potatoes take a little longer time to cook than the normal).

Let it rest with tight closed lid for few minutes so that the stream remains inside the kadai, now serve your dish with roti’s. It can be used are one of the side dishes too.

They are not french beans. They are called broad beans or Sem ki phalli.
