Pav┬áBhaji┬áis one of my favorite street foods, I have enjoyed eating this always without getting conscious┬áon the hygiene factors etc. Each Indian city has its own favorite street food…. pav┬ábhaji┬áis best known from Maharashtra and Pune┬áand the one I relish is from Mumbai,┬áthough have eaten the pav┬ábhaji┬áeverywhere in India┬áfrom north to west and now down south. But I┬álove eating it the most in Mumbai and Delhi, every time┬áI am in Delhi┬áI don’t miss on eating my famous street foods from the chats to samosa┬áand of course the pav┬ábhaji. The common factor in all these foods is┬áthe lip-smacking taste,which is sure to leave behind a lasting impression & satisfaction.
But the best way┬áI feel is making the pav┬ábhaji┬áat home with almost all the vegetables you want your family to eat. If kids don’t┬áeat vegetables try making pav┬ábhaji┬áfor them and use all vegetables you want them to have. You can add beetroot,bottle gourd,any beans also if you wish… though I have added the ones that are used in regular pav┬ábhaji┬árecipe.
- Carrots - 2 medium size
- Cauliflower - 1 small,sliced about 2-3 cups
- Potatoes (peeled and cut) ÔÇô 3 -4 medium
- Green Peas ÔÇô ┬¢ cup
- French Beans - 1/2 cup
- Oil - 1 Tablespoon
- Green bell pepper ÔÇô 1 medium size
- Cauliflower ÔÇô ┬¢ cup (approx. ┬╝ of a medium size)
- Salt to taste
- Ginger ÔÇô garlic paste ÔÇô 1 teaspoon
- Turmeric Powder ÔÇô ┬¢ teaspoon
- Red chilli powder ÔÇô ┬¢ teaspoon
- Pav┬áBhaji masala ÔÇô 1 tablespoon (you can add more as per taste)
- Onions ÔÇô 2 medium
- Tomatoes ÔÇô 4 medium
- Butter as per taste (pav bhaji is known for dollops of butter in it)
Method -
Boil potatoes,cauliflower,cabbage,peas,carrot,beans,capsicum ( I pressure cook them all), till they are soft and tender. Let them cool a little. Mash them nicely and keep aside.
Now in a mixer blend onions and tomatoes along with the ginger garlic paste till it becomes a puree. Take a kadai heat oil, add the onion tomato puree to it and let it fry for 7-10 minutes on medium flame till the oil starts to leave the side of the kadai.Ones that is done then add all the dry spices to it and saute for another 3-5 minutes.
Now add the mashed boiled veggies to it. Keep mixing everything and keep on low flame. Add butter too, you can use a potato masher or any kind of masher to mash all the veggies along with the onion tomato puree. Keep adding water to it as per your taste and thickness you prefer of your pav bhaji. Let it simmer on low flame with slightly close lid for another 15 minutes (on boiling the bhaji will spurt so be careful).
Bhaji can be adjusted as per the taste, you can add salt,red chilli,pav bhaji masala and water as per your own taste too.
Use loads of butter….dont count on┬áthe calories please :)… at least not while having this dish. Top it with chopped onions and lemon wedges. I garnish my bhaji with chopped onions, few boiled peas, cilantro and the lemon wedges. Serve hot with buns or any bread of your choice. Toss the buns in butter before serving.
