Karela Aloo ( Dry bitter gourd and potatoes mix veg)
A quick fix recipe if you really don’t want too much to do…easy to make, not that time-consuming yet tastes too good and healthy!!
- Bitter Gourd - 2 large size sliced circular ( refer to the pic)
- Onions - 2 large sliced long
- Potatoes - 2 large sliced circular ( refer to the pic)
- Salt to taste
- Red chilli powder - 1/2 teaspoon
- Turmeric Powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Dry coriander powder - 1 1/2 teaspoon
- Pinch of hing ( asafoetida)
Method -
Wash and chop all vegetables. Heat oil in a kadai, add pinch of hing and then onions, let it fry on low flame for about 3 minutes, then add the potatoes and karela to it. Close the lid and let it simmer on low flame for about 10 mins(pl keep checking in between twice so that it should not touch the kadai bottom, don’t stir them too much else the karela and potato slices will break). Add rest of the dry spices and cook on low - medium flame with open lid now for 5 -7 minutes(check with knife or fork that the potatoes and karela are cooked and soft, if not then cook for another 5 minutes with close lid, sprinkle little water onto it and close the lid).
Serve hot as a side dish or with parathas and curd.
