Oat and Nut Crackers Recipe

Kids exams are over and now time for 24/7 mamma’s service open for them….thankfully they have a week’s school left still and then a break for good two months….being a full-time mom is just not easy, I had never lived a full-time mom’s role till I took a break from my hectic career.

When I decided to take a break, no one was ready to believe that I am going to sit at home and do nothing and with the raised eye brows all my friends and family members use to say not more than a week or max a month and then she is back to her corporate life!

It didn’t happen…yooo hoo!! Here I am as of now a full-time mamma home maker , 24/7 at my kid’s service…I am really loving it and I am thankful to god for giving me this opportunity before I would have realised it’s too late to treasure this phase of life with them.

I have learnt a lot staying at home and trust me it is one hell of a job too. I sometimes tell my kids it was easy for me heading a customer service vertical, handling thousands of over demanding HNI clients than managing you guys :) .

Now I realise there is a lot to do when it comes to bringing up kids, it’s a scary world ahead. My daughter is in her tweens and my son is nine…..time flies. When I sit back and think how I held them first when they were born, just like yesterday….maybe it’s a common feeling with all parents specially the ones who are emotional parasites like me :) .

The key to a healthy child development is building a close parent children relationship. I am trying my bit by being a good mom to them (sometimes overdoing though simply out of the guilt of not spending that much time with them in their initial growing up stage).

Few learning’s during my new home makers profile is that we as parents need to be understanding, we must use positive words ( I often give examples to my kids from the famous book The SECRET - Rhonda Byrne), show empathy, encourage gratitude. Small small things but will definitely help kids in their growing up stage. My kids are really picky eaters and they don’t like eating oats as a simple porridge meal also so I was looking for various substitutes of oats recipe to add in their daily meals, got few good ideas on that. One was to add oats in the dough for making chapatis other was oats idli or dosa recipe, then oats muffins with some fruits puree added to it etc and then I came across these Oats recipe.

I prepared this healthy and quick Oat and Nut Crackers for them, a recipe that I adapted from Chef Harpal S Sokhi ’s website, I like watching his show Turban Tadka on foodfood channel and love the way he says now time to add some energy - “NAMAK SHAMAK DAAL DETE HAI” - so cute, he makes cooking seem so damn simple, perfect recipes one can see on his shows. Simplicity to it’s perfection, I must say!!

So here I go with the recipe -

Ingredients –

  • Oats – 1 Cup
  • Butter – ½ Cup
  • Dried fruits (Mixed) – ½ Cup (I used almonds, raisins, cashews, figs, apricots)
  • Brown Sugar – ¼ Cup
  • Honey - 1/4 Cup

Simply Oats!!!!

Nuts & Only Nuts…..

Method –

Preheat the oven to 180 degree C for about 10 minutes. Now time to start preparing for the bars. Chop all the nuts you wish to add in your Oat & Nut crackers. I added almonds, raisins, cashews, few apricots & figs to my crackers. You can add walnuts too!

Take a bowl and add all the ingredients in it together. Mix well with the help of a spatula.

Now pour this mixture onto a greased baking molds and bake in a preheated oven for about 20 minutes.

Once done, allow it to cool and then you can shape them up a little. Serve as you wish, I wrapped few in the chocolate papers and few I kept in the paper molds to create some excitement among my kids!

i have oats at home all packed. i just don’t know what to do with it. wish i liked oats.
