Eggless Mango Cake - Vegan Recipe

Mangoes once again!!! Yes you thinking right, mangoes and more mangoes, the mango mania is still on!! What to do? I am so obsessed with this king of fruits that I use this fruit to the fullest each year. I prepare a lot of mango recipes because we all love having mangoes in various forms. Though I have not posted all the mango recipes I prepared at home because I guess I have been too busy eating mangoes than posting the recipes :) .

My son loves Mango Milk Shake and my daughter is too fond of Mango Ice Cream. I love my mom’s mango chutney and I also love my Instant mango pickle. This season also I made many mango recipes like Mango Pickles, Aam Pana, Mango Lassi and Shrikhand but haven’t posted any of these, few still sitting nicely in my draft…. too lazy or may be because I was occupied in getting my websites makeover done! I will post few more Mango Recipes soon before the mangoes bids us adieu for this season!!

I made this Eggless Mango Cake over the weekend for my kids and it turned out too good. They loved it. It came out slightly moist and dense. You can top it with honey, mango glaze,chocolate syrup or even with simple Aam Rus…trust me it will go well with this cake!

Eggless Mango Cake - Vegan Recipe

Mixing time - All you need is 2 big bowls for wet mixture and dry mixture. For Dry mixture - sieve all-purpose flour along with baking powder and cardamom powder. For Wet mixture - add oil,sugar and mango puree and blend till sugar dissolves nicely to form a smooth batter.

Add vanilla essence to the mango batter and mix again. Then pour dry mixture into the wet mixture bowl and mix it with the help of a wooden spatula, please do not over mix this batter, do it gently. Pour it in the greased baking tin and bake in a preheated oven at 180 degrees for 35 -40 minutes. Check by inserting a tooth pick if done. Dust powdered sugar over it and serve.
This cake has a lovely yellow color, sweetness can be adjusted depending upon the mangoes. You can also add 1 teaspoon on honey to this cake while mixing if you wish to have more sweetness. When the cake is cooled completely you can spread mango syrup or honey on top of it. My kids poured some chocolate syrup over the cake slices, they are real chocoholics :) not to miss along with being seasonal mangoholics too!

Eggless Mango Cake – Vegan Recipe

Cook Time: 1 hour

Total Time: 1 hour, 20 minutes

Yield: 6

Ingredients

  • • All Purpose Flour – 1 ½ cups
  • • Salt – ½ teaspoon
  • • Mango Puree – 1 ½ cups
  • • Baking Powder – 2 teaspoons
  • • Oil – 1/3 cup
  • • Vanilla Essence – 1 teaspoon
  • • Granulated Sugar – 2/3 cup (Increase or decrease depending upon the sweetness of the mangoes)
  • • Cardamom Powder – 1 teaspoon

Instructions

  1. Wash, peel and blend the mango chunks to form a puree.
  2. Take two big bowls for dry and wet mixture.
  3. In the first bowl sift flour, baking powder and cardamom powder together and keep aside.
  4. In the second big bowl mix sugar, oil and mango puree together with the help of the blender till sugar dissolves completely. Add in the vanilla essence to it and mix again.
  5. Now to this wet mixture bowl gently add in flour and keep mixing with the help of a wooden spatula, please do not over mix the batter.
  6. Bake in a 180 degrees preheated oven for 35 - 40 minutes, insert the toothpick to check if done will come out clean else keep for few more minutes.
  7. Remove when done; the cake will leave sides from the baking tin.
  8. Dust some powdered sugar and serve after cooling.

Yeah Dassana do try it, in fact it will taste too good if you refrigerate it for few minutes. I did that and like it that way & spread some honey over the cake slice!
