Ghiya ki sabzi (Bottle Gourd zero oil zatpat cooking)

One of my easy to make dishes with zero oil, this is my all time favorite recipe when I plan to go on a diet or feel like preparing something real light for myself. Too fast and yet guilt free. Vegetable simply cooked in water and steam.

Ingredients -

  • Bottle Gourd - 1 medium size (chopped)
  • Tomatoes - 2 medium size chopped
  • Onion - 1 large chopped
  • Salt to taste
  • Turmeric Powder - 1 teaspoon
  • Red chilli powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Dry dhania powder - 1 teaspoon
  • Coriander leaves - chopped
  • Cumin seeds - 1/2 teaspoon

Method -

Take a pressure cooker and add all the above ingredients together into it with 2 tablespoons of water and mix well. Pressure cook it without any oil for about 10 minutes and lower flame after one whistle. After 10 minutes let it sit in steam for another 7 minutes, open it and cook on medium to high flame for another 5-7 minutes and in between keep stirring. Your ghiya ki sabzi is ready and trust me will taste equally good without any oil. If you wish your vegetable to be more soft, please do over cook it with open lid for another 5-7 minutes.

This is too quick to make and best for weight watchers. I prepare this lots many times for my self and feel this to be a blessing for me when I am on serious diet control. I prefer eating this with mint chutney and curd.
