Russian Tea Cakes Recipe

My new Christmas cookies! Yummy and easy. Have eaten these Russian tea cakes long back at a friend’s place over a cup of coffee and since then I always wanted to bake them, recently I found this recipe from one of the cook books and felt like trying them immediately… they came out well, my one of the christmas time recipes which from now on got fixed. I made one batch for the kids and quickly regretted not doubling it to have more. They truely do melt in your mouth and they’re not too sweet. Very easy to make.

Ingredients -

  • All-purpose flour – 2 cups
  • Butter – 1 cup (room temprature)
  • Vanilla Essence – 1 teaspoon
  • Powdered Sugar – ½ cup
  • Walnuts – ½ cup chopped
  • Sugar for decoration – 1/3 cup

Method -

  • Firstly preheat oven to 175 degrees C.
  • Take a bowl and cream butter and vanilla until the mixture becomes smooth. Combine the powdered sugar and flour to it and stir into the butter mixture until just blended.
  • Mix in the chopped walnuts.

  • Roll dough into 1 inch small balls and little flattened
  • Place them 2 inches apart on an ungreased cookie sheet.
  • Bake for 10 - 12 minutes in the preheated oven.
  • When cool, roll in remaining sugar.

Loved these cookies, these cookies are just right, not to sweet but sweet enough and not hard to make. So what are you waiting for, pick up your baking skills and start preparing these for your loved ones and enjoy the festive fever!!
