Homemade Vegetarian Cheese Pizza (small) - Loaded with toppings :) . I saw this small size pizza recipe in a cooking show and was too tempted to try it out for my kids. I do bake Pizza at home with onions, tomatoes, cheese, olives & capsicums but have never tried this recipe. This is baked keeping in mind to make my picky kids eat cottage cheese and veggies together. So you will see actually the pizza is too loaded :) . I prefer giving cottage cheese to my kids in the form of paneer wraps and paneer burji most of the times. Though I try to give them healthy food as far as possible but you know how kids are, so I try to tweak my recipes and ensure all possible nutrients go in their regular meals as much possible.

This homemade double cheese pizza recipe is a healthy version in the pizza categories I must say :) and a must try for kids, I baked a small size pizza. This pizza can also be served on Kids Birthday Parties.

I got the pizza base from a bakery I prefer buying stuff from. Daily Breads - It’s a nice bakery in Bangalore with fresh stuff. When it comes to baking, I am still in a learning phase though I love baking cookies for my kids and few cakes occasionally. Now I need to catch up with few home-made breads too.

This is a simple recipe with lots of cottage cheese along with the veggies.

I made the pizza sauce at home which again is quick and easy. For the sauce, you need tomato puree, tomato ketchup and cooking butter or you can use the normal salted butter too.

Take a pan, heat butter and add tomato puree to it, stir for few seconds and add tomato ketchup to it. Stir for 3-4 minutes on low flame and switch off the flame and keep aside for cooling.

For the toppings, you need chopped onions,capsicums. I have used green and red peppers (capsicum) both & cottage cheese. Heat oil in a pan, add onions,saute for few minutes, then add in the peppers, stir and let it cook for few minutes on low flame, now add in crumbled cottage cheese to this and stir, let it cook for few minutes. Switch off the flame and keep aside.

Now time for topping the pizza base, take a small size base, spread the pizza sauce nicely over the base, top it with the filling, spread it evenly all over the base. Take mozzarella cheese and grate it over the pizza. Sprinkle oregano, chilli flakes and black pepper.

Bake it for 20 minutes at 170 degree C. You Pizza is done, if you wish to have more crispy then bake for few more minutes, it also depends of oven to oven, so adjust it accordingly.

Ingredients

  • - Small Size Pizza Base - 2
  • - Tomato Puree - 2 tablespoons
  • - Tomato Ketchup - 1 Tablespoons
  • - Chopped Onions - 1 medium
  • - Chopped Capsicum - 1 medium
  • - Cottage Cheese - 1/2 cup
  • - Mozzarella cheese as required
  • - Black Pepper - 1/4 teaspoon
  • - Salt as per taste
  • - Red Chilli Flakes - as per taste
  • - Oregano - 1/4 teaspoon
  • - Dry Basil - 1/4 teaspoon ( optional )
  • - Butter - 1 tablespoon
  • - Oil - 2 tablespoons

Instructions

  1. Take 2 small size pizza base.
  2. Take a pan, heat butter and add tomato puree to it, stir for few seconds and add tomato ketchup, mix and give a quick stir. Remove from flame and keep aside..
  3. Heat oil in a pan, add chopped onions and sauté for 3 -4 minutes, add chopped capsicums to it and mix well and let it cook for another 5 minutes. Now add crumbled cottage cheese to the mixture and stir, add spices of your choice to it (I added little black pepper and pinch of salt). Let it cook on low flame for few seconds. Switch of the flame and remove.
  4. Take the pizza base, spread the tomato sauce evenly on it, top it with the veg cheese mix as much you like and grate the mozzarella cheese on top of it all over, covering the entire pizza base nicely.
  5. Sprinkle oregano herb / dry basil or white/black pepper on it and some chilli flakes.
  6. Bake it in a preheated oven for 20 minutes at 170 degrees C.
  7. Melting cheese hot pizza is ready to serve.

Notes

You can add any veggies of your choice to your pizza. Bake it according to your oven, mine perfectly baked in 20 mins. Use any kind of herbs as per your choice to make your pizza taste more yummier. Keep checking inbetween by lifting the base with a spatula, your base should not burn. ( Do this process after 15 mintues, you will get an idea about the pizza, if more time required or not, continue accordingly ).

I love cooking with my kids! Lately we’ve been practicing many of the kids recipes at home together over the weekends and it’s so much fun! I missed all this for years due to my job, but I am glad I can cover up now .

the pizza is looking good. when in bangalore, even i used to buy daily bread stuff always :-)

even here they have a outlet at panjim. so when we go there, i end up buying some different kind of breads.

This pizza looks soo tempting… Since I turned Vegan I haven’t had pizza yet… I’m so tempted with this pizza that I should seriously make some vegan cheese and have a home made pizza. I love Pizza which is loaded with topping just like this. :)
