Aloo Shimla Mirch ki Sabzi (Capsicum Potato Mix)
A simple and easy to cook recipe but quite delicious - Aloo shimla mirch sabzi. It is a dry vegetable and can also be used as a side dish. Mostly prepared in all the indian houses in different forms. I have cooked it in my north indian style as learned from my mom.
Ingredients -
- 2 large capsicum ( Can use red or yellow pepper to give color to the vegetable, I do use them also many times to give variation to my dish )
- 3 - 4 potatoes
- Salt to taste
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon garam masala powder
- 1/2 amchur powder or as per taste
- 2 tablespoon Oil
Method -
Wash the vegetables then chop capsicum and potatoes into long little thick slices, keep them in water till you heat the pan/ kadai. Heat the oil add potatoes and cook for about 3-5 mins on low flame and then add the capsicum to it. Stir once, add salt and turmeric to it and close the lid. Cook on low flame for 7 -10 mins, please keep checking the vegetable should not burn or stick too much to the kadai bottom. Let the vegetables gently get fried in the oil on a slow flame. This will take some time. Add red chilli powder, amchur,coriander powder to the preparation. Finally when done ( both become soft - you can check potatoes by pricking it with a fork) sprinkle garam masala on it.
Serve it with rotis,parathas or as a side dish.
