Shahi Aamrus
King of all fruits with a touch of shahi andaaz, a tasty mango delicacy…. Aam means mango and Ras means juice. It’s one of my favorites , I love eating bowls full of aamras and so do my kids.In Gujarat, the traditional way is to serve aamras with pooris. But it can also be had after a meal as a sweet dish.
Ingredients -
- Mangoes 4-5, you can use as many number of mangoes you want. ( I use the Alphonso mangoes for making the aamrus as they are much sweeter and thicker as compared to other variety of mangoes)
- sugar or jaggery
- cardamom powder (optional)
- saffron strands/kesar (optional)
- milk (optional)
- Figs 2-3
- Almonds chopped 5-7
- Raisins 8 -10
- Pistachio flakes
Method -
Take the Alphonso mangoes and wash them, peel and chop them into small pieces. Blend the chopped mangoes in a blender. Add saffron strands and sugar or jaggery to the blender itself. The amount of sugar and jaggery depends on your own preference of sweetness. Once the mangoes are blended add little milk if you prefer (I have not added milk to them as wanted the true flavor of the mangoes).
Microwave figs, raisins in little water for less than 10 seconds to make them little soft. Drain the water or squeeze the excess water from them, chop figs into small cubes or slices and keep aside. Chop almonds, few pieces of mango, pistachios Add all the dry fruits in the aamras along with pinch of cardamom powder or saffron strands. I have mixed the saffron in the mango pulp itself while blending. In small bowls, pour the mango pulp. Chill in the refrigerator. It can be served as a dessert topped with cream, along with vanilla ice cream and also with hot pooris. You can eat the way you like it.
