Cakes are one sweet options which are loved by most of us especially the kids. I still remember I use to love eating tutti frutti cake slices when I was a kid, I mainly liked the different colors of tutti frutti in the cake. This time I felt like baking this yummy tea time cake or rather will say anytime cake for my kids and what better time than christmas around the corner. Easy to bake and too tempting to resist, trust me my kids loved it and surely you will too!!
Ingredients:
- All purpose flour/maida – 1 cup (you can add additional 2 spoons more to it)
- Baking powder – 1 ½ teaspoon
- Granulated white sugar – 1 cup
- Butter – 100 grams
- Eggs – 3 (room temperature)
- Tutti frutti – ½ cup
- Walnuts chopped - handful
- Vanilla essence – 1 ½ teaspoon
Method -
Preheat oven for 15 minutes before you put the cake in for baking, what I do is when I start preparing for the cake making I switch on my oven for 15 minutes at 180 degrees.
Now let’s go step by step –
- Take two big bowls
- One big bowl put butter melted ( kept at room temperature) and add sugar to it, mix with a hand blender for few minutes.
- Second bowl sieve maida, baking powder together.
- Add eggs one by one into the first bowl in which you have mixed butter and sugar, keep beating with the hand blender or with a wooden spatula. After you have added all the eggs to the bowl, put vanilla essence to it, vanilla essence is added so that the eggs smell vanishes.
- Now add the maida and baking powder mixture to the first bowl and mix well with the spatula and then with the blender lightly.Do not over beat, just mix till well combined in low-speed.
- Sprinkle some flour over the tutti frutti to coat them, this is done so that the tutti frutti dont sink to the bottom of the cake while baking. Then add this tutti frutti to the batter and fold gently into the batter. Please remember not to beat it but just fold until combined.
- Pour batter into the greased and floured cake tin. Bake in preheated oven at 180 degrees for 45 minutes, after that open the oven and check with the help of a toothpick if cake is baked fully by inserting into the cake and if it comes out clean indicates your cake is ready.
- Place on a wire rack to cool for 10 minutes.
- Cut into pieces and serve.
