Vegetable Salad with Yogurt | Simple and Easy Salad Recipe ~ Happy International Women’s Day

For those who celebrate Women’s Day EVERYDAY~ Happy International Women’s Day!!!

May the Women be respected and celebrated everywhere, every single day! Here I am sharing with you all a simple quick and super easy salad recipe. My all time favorite, to me this glass full of fresh veggies is a meal in itself, I can have this for my breakfast, lunch and even dinner :) .

A quick post on a healthy vegetable salad with yogurt dressing. This is one salad that I love to have and most importantly I love to have this salad in a glass…simply my way :) . I love the different colors in the salad due to the veggies and the layers! Isnt it crazy, I find it too childish but that’s the way it is. Making this simple and quick salad is no rocket science just add in whichever veggies you feel like having in your salad and pamper yourself to a healthy breakfast.

I have mentioned about adding green peas in this salad but when I made this for myself I was not having them in my kitchen so the photos miss out on the green peas, however I add them most of the time. Do add lots of veggies and enjoy this simple yet healthy treat.

You can use plain yogurt or even flavoured yogurt, I have used plain yogurt only for my salad.

Ingredients

  1. Shredded & chopped Carrots - 1 cup
  2. Shredded & chopped Cabbage - 1/2 cup
  3. Grated Beetroot - 1/2 cup
  4. Frozen Green Peas - handful
  5. Yogurt - 1/2 cup

Dressing

  • Lemon zest
  • Fresh chopped mint leaves (optional)
  • Pinch of oregano
  • Salt and pepper to taste or you can season it with spices and herbs of your taste

Method -

  1. Bring water to a boil, add salt and frozen peas for about five minutes and cook until fork tender. Remove the peas from the water and put them in iced water to stop the cooking process. Remove peas and put them on towel paper to dry. Pat dry if required.
  2. To make the dressing, whisk all ingredients until combined. Taste & adjust seasoning if necessary. ( I added salt, pepper, oregano and lemon zest in my yogurt)
  3. Take a wide serving glass, add 1 tablespoon of yogurt at the bottom and then add carrots, cover the carrots with another tablespoon of yogurt.
  4. Form the layers this way for all the veggies followed by yogurt till you reach the top of the glass.
  5. Top it with little salt and pepper or season to taste by adding spices or herbs of your taste.

Serve cold and enjoy this refreshing vegetable salad with yogurt dressing.
