A healthy┬áoption with lots of vitamins and┬áiron and too quick to prepare. I love Spinach and whenever I think of Spinach I recall this famous cartoon character Popeye - the sailor man with his bunch of spinach as instant energizer┬áand thats┬áhow I try to convince my kids to eat this healthy dark green┬áleafy vegetable dish. Since my daughter is too fussy on having healthy food, I am always on my toes to make her eat in some form or the other keeping in mind the nutritional balance. For those who don’t know my sweet adorable angel is not a small kid, in fact she will be turning into teens next year, ahaa┬á!! and still so much of fuss, at last kids are kids but mothers will always be mothers
and no stopping in their efforts when it comes to the kiddos!
Ingredients -
- Palak - 2 -3 Bunches
- Paneer - 250 grams
- Onions - 2 medium size (finely chopped)
- Tomatoes - 2 medium size (finely chopped)
- Salt to taste
- Red Chilli Powder - 1/2 teaspoon
- Cumin Seeds - 1/2 teaspoon
- Turmeric Powder - 1/2 teaspoon
- Garam Masala Powder - 1/2 teaspoon
- Ginger and Garlic Paste - 1 teaspoon
- Green Chillies - 1 slit into half
- Cream for garnishing (optional)
- Oil - 2 tablespoons
Method -
Wash the palak┬áleaves nicely and pressure cook with a very little water for one whistle. Let it cool for 15 minutes and on cooling grind it to a smooth paste. Take a kadai, heat oil and add cumin seeds, let it flutter, ensure cumin seeds don’t burn and then add ginger garlic paste, green chillies and stir for 1 -2 minutes, add finely chopped onions,saut├® till the onions are golden brown on low flame, add chopped tomatoes or you can use tomato puree also for this recipe (2 tablespoons).
Cook on medium to low flame for another 7 minutes or till you see the mixture starts leaving the sides of the Kadai. To this now add all the dry spices and mix well. Cook for few minutes and add the palak paste to this masala gravy.
Add the paneer and cook till you start to see the gravy bubbling and if you feel that the gravy seems a bit dry, you can add some more water (Since we have pressure cooked palak with little water there will be sufficient water already in the paste but if you feel you need more or as per your liking please add little more boiled water to it and cook the entire mixture on low flame for 5 - 7 minutes).
Serve hot with any form of Indian Bread, you can garnish it with fresh cream also.
