Hari Mirch Masala (Instant Pickle)

Green stuffed masala chillies instant pickle - I love eating it with my meals…it goes really well when you have made a dish that is little bland and you want to check on your taste buds…. hari mirch ka achaar is the right option….try it….trust me if you have a spicy taste buds you will love eating this….
Ingredients -
- Big Green Chillies - 7-8
- Salt - 1 1/2 teaspoon
- Red chillies 1 1/2 teaspoon
- Mustard seeds (coarsely ground) - 2 tablespoon
- Methi (fenugreek) seeds (coarsely ground) - 1 tablespoon
- Turmeric Powder - 1 teaspoon
- Garam Masala - 1 teaspoon
- Dry coriander powder -2 teaspoon
- Fennel seeds (coarsely ground) - 1 tablespoon
- Nigella Seeds ( Kalonji) - 1 teaspoon
- Amchur powder - 2 teaspoon
- Oil - 2 tablespoon (should be enough to saute the stuffed chillies)
Method -
Wash and wipe the green chillies, keep it to dry for about 5-7 minutes.In the meantime mix all the dry spices in a bowl with hands. Now your green chillies are dry, slit them from one side (top to bottom). One by one with your hands stuff the dry mixed masala into each chilli. The masala should be inside all the green chillies from top to bottom. Keep aside.
Now take a heavy bottom kadai, pour oil, when the oil is hot, put all the masala stuffed chillies into the kadai one by one. Cover it and let it cook on low flame, keep checking in-between (the chillies should not burn). Once the chillies are little soft. Switch off the flame and let it rest in the kadai for 7 minutes.Ensure the lid of the kadai is closed.
When cooled, put them in any glass container or bowl, refrigerate it and it can be used for about a week. Goes well with any meal.
