Allam pacchadhi (A famous Andhra recipe)
Allam in telgu means ginger (adrak) and Pacchadhi means chutney. It is a chutney that can be eaten with Idli, Dosa etc. It can be tried with any form of rice. It is spicy chutney and one of my all time favourites.
Ingredients:
- 50 grams ginger (adrak), chopped
- 1 to 2 tbsp grated jaggery (gur)
- 1 big lemon size tamarind (imli - soaked in half a cup of water)
- 1 tbsp oil
- 5-6 whole dry red chillies
- 1 tbsp urad dal (split black lentils)
- 1/4 tsp fenugreek (methi) seeds
- 8-10 curry leaves
- 1/2 tsp mustard seeds ( rai / sarson)
- a pinch of turmeric powder (haldi)
- salt to taste
Method:
Heat oil in a pan and add black gram, fenugreek seeds and mustard seeds, as mustard starts spluttering, put in red chillies broken into pieces curry leaves, cook till light brown and allow to cool by removing from the burner. Grind to a fine paste with all the ingredients (imli pulp along with the water in which it was soaked, ginger,jaggery and all dry spices). Yummy spicy Allam Pacchadhi is ready.
