Strawberry Parfait - A healthy treat for the eyes & the taste buds!
I was too tempted to try this at home the very first time I had this dessert (though much richer version), it was a treat to the eyes and the taste buds too. I was not able to understand what exactly was in the glass apart from what all I could see and assume then….!! Finally got it right ….A Strawberry Parfait - Parfait is a traditional French-style dessert made by layering cream, yogurt with fresh berries in a tall glass.
I had never tried a parfait at home apart from just mixing few fruits with some sweet cream to form a dessert, I tried my hands on a healthy version of a Strawberry parfait and wow was the look and taste….NO GUILT TOO
. I prepared this not as a dessert but for the breakfast and deliberately avoided cream in the parfait. It was too filling and refreshing, one glass of this healthy version of a parfait is a meal in itself….trust me you don’t need anything else with it and if you are also looking for some quick and easy low-calorie breakfast idea’s then THIS IS IT!!!!!
A healthy treat….mix of yogurt,cereals,honey and berries!!!! For preparing this parfait you need to pick fresh strawberries & yogurt of your choice, I used plain yogurt and added honey to it but you can also use flavored yogurt, next time I plan to prepare it with strawberry yogurt. Do not wash the strawberries until you’re ready to make this recipe. This will help keep them fresh and your parfait will tastes that extra sweet:).
Ingredients -
- Yogurt (of your choice – flavoured or plain) – 1 ½ cups
- Strawberries (fresh and diced) – 1 cup
- Biscuits (mixed – I used Ragi, Marie) – 4 - 5
- Cereals / Granola (of your choice) – 1 cup (I used muesli flakes with nuts)
- Orange juice – 1 tablespoon
- Honey – 3 tablespoons (can add more – optional)
You can customize these low-calorie breakfast or dessert recipe by incorporating your favorite fruits. A banana or slices of pineapple and sweet cream can also be added to the parfait, there are various ways to prepare a parfait and the best will be the one that suits your taste buds – I avoided the cream by choice to keep it low-calorie recipe for myself.
Method -
It’s the most simple recipe but I am putting a step by step method here for you to keep it more simpler.
First Step - Combine yogurt and 2 tablespoons of honey; mix them and keep aside.
Second Step - Take a small bowl; mix diced strawberries, orange juice and 1 tablespoons of honey in it.
Third Step – Take a zip lock pouch and place biscuits in it and crush them gently with a potato masher or anything you have got handy may be a rolling-pin :).
Fourth Step – Mix the cereals with the crushed biscuits and keep this ready for the final step.
Final Step - Take a tall glass and now is the time for layering the ingredients (creatively layer your low-calorie strawberry parfait) , the order that I used is - I first added the cereals & biscuit mix to the bottom of the glass, then I topped it with 2 tablespoons of yogurt & honey mix and after that diced strawberries, repeat this same sequence till you reach the top of the glass.
Garnish on top with strawberry slices and biscuit mix. Refrigerate it until serving time and serve chilled.

Once again, these pictures are worth thousand words. At 1 stage I was quite hooked on fruit parfaits. I had 2 tricks I would like to share -
1. Refrigerate the glass so it is cold before you start layering. It will hold the layers for sometime while you eat.
2. Dice the fruits as fine as you can (not to fine that they go mushy). That way you can fit lot more in each layer (and the yoghurt or cream won’t pass through layers). Try each layer different fruit.
