Kheer ( Rice Pudding )

‘KING OF INDIAN SWEET PUDDINGS’ ….any celebration, traditional function, festivals - Kheer is one indian pudding that always finds its way in the menu in INDIAN KITCHEN ….Kheer is very simple and easy to cook pudding bringing in the richness and elegance of all the ingredients. In north it is called Kheer and in South India it is called Payasam.

Ingredients -

  • 1/4 cup rice
  • 1 litre whole milk
  • 1/4 cup sugar (adjust to taste)
  • 6 - 8 strands of saffron
  • Pinch of crushed cardamom
  • 2 tablespoons sliced almonds
  • 1 tablespoon sliced pistachios
  • 2 – 3 tablespoons milk maid ( optional )

Method -

Use a heavy bottom deep pan to make kheer. Wash rice nicely till water gets clear; soak rice before cooking for about 10 mins. Boil milk and keep on low flame, add rice to it and let it cook on low flame, cook till rice is tender and the milk comes to the half quantity and creamy, add milk maid to it and keep stirring, ensure it does not touch the vessel bottom and burn. Milk should reach the creamy consistency. Then add sugar, saffron, cardamom, almonds and pistachios and let simmer for a few more minutes. Keep cooking on low flame till you feel it becomes thick and creamy. As the Kheer cools it will become thicker in texture. Kheer can be served chilled or warm both.
