DAHI BHALLA
Deep fried balls of urad dal, served in yogurt and chutney
Preparation time: Urad dal to be soaked overnight, cooking time 30 mins.
Ingredients:
- Split black gram skin less 1 cup
- Salt to taste
- Red Chilli powder › tsp
- Asafoetida a pinch
- Raisins 8 -10
- Oil to deep fry
- Yogurt 3 cups
- Castor sugar to taste
- Mint chutney to taste
- Tamarind chutney to taste
- Roasted cumin powder 2 teaspoons
- Fresh coriander leaves chopped 2 tablespoons
- Ginger, cut into thin strips 1 inch piece
Method:
Soak the urad dal overnight in 3 cups of water. Grind it to paste adding little water, asafoetida and salt. Grind till you see the mixture forming bubbles in the mixer. Make it a smooth paste.Add raisins and red chilly to the batter. Now heat sufficient oil in the kadai. Drop batter with the help of table spoon in the kadai to form small balls and fry until light golden. Drain onto an absorbent paper. These are now called bhallas or vadas. Put bhallas in sufficient quantity of hot water. Leave for two minutes. Squeeze between your palms to drain out water.
For the serving: Whisk yogurt well with little castor sugar and salt to taste. Place bhallas on a plate and cover with yogurt. Add mint chutney and tamarind chutney. Sprinkle red chilli powder and roasted cumin powder. Garnish with coriander leaves, chopped ginger and serve immediately. Your Dahi Bhallas are now ready to serve..
