Beetroot Raita or Beetroot Yogurt Recipe

Beetroot in Yogurt ( Beetroot Raita )

A healthy option, beetroot raita or beetroot yogurt dip is one of my favourites. Unfortunately this is only preferred by me at my home and nobody else prefers it. But I smartly use beetroot in other forms in my kid’s meals because beetroots composition has a high content of pro-vitamin A and vitamin C. It is rich in fibre, folic acid, B vitamins such as vitamin B1, B2, B3 and B6, iodine, to a lesser extent magnesium, sodium, potassium, calcium, and phosphorus.

It is an easy to prepare dish and a highly nutritious recipe. So some days when I am to self and want to pamper, I try to cook things just for me :) . I prefer eating this in the afternoons and prepare this raita for myself ONLY; I use this as a side dish too with rice or hot chapatti’s along with some veggies. I keep it simple with just beetroot in yogurt but we can add a lot of vegetable to it like boiled potatoes, cucumber, grated cabbage, peas, grated carrot, onions.

Ingredients -

Serves - 2

  • Beetroot ( finely grated ) - 1 medium size
  • Yogurt - 2 Cups
  • Salt to taste
  • Green chilli - 1-2 finely chopped
  • Red Chilli Powder - 1/4 teaspoon
  • Garam Masala - 1/4 teaspoon
  • Fresh Mint Leaves for garnishing

Method -

Take a bowl and whisk in the yogurt to a smooth paste, add grated beet to it and mix well. Finally add the green chillies and the dry spices and stir well. Garnish with mint leaves and serve chilled.

You can use this as a dip too, beetroot raita goes well for people who are wanting to eat light dinners/ meals or plan to go for a healthy diet option. It is to filling and healthy!

While reading about this recipe I came to know that beetroot yogurt can also be prepared by tempering it with mustard seeds, dry red chillies, few curry leaves and a pinch of asafoetida in 1 teaspoon oil, I have never tried this option but always liked it simply mixed in yogurt with few dry spices for flavour. May be will try it out next time to see if it fits my taste buds :)

its good to pamper oneself at all times. as we women we generally tend to neglect ourselves when it comes to our families and kids.

the beetroot raita is one raita,i never make. i had made it a couple of times, but stopped making it. coz nobody has it at home and i have to eat everything.

Agre and so true, same happens at my place too! I also dont prepare it too frequent, this time had it with dry mix veggies and plain boiled rice. It went well with this combo!
