Eggless Choco Chip Cookies Recipe
My daughter’s last day to school before vacations is always celebrated with a potluck party in the class. There is a lot of excitement among the kids before the vacations start. As always I was told to make things that she and her friends would love to eat! This time she came up to me for baking a cake or cookies. Last time she took the M&M cookies to school, all her friends loved it.I was puzzled on what to make because being navaratri we don’t eat & use eggs at home for full nine days……so I thought of baking something eggless with the intention that kids should love eating it. I ended up making these lovely eggless choco chip cookies. A recipe that I adapted from FOOD.COM . Thankfully was happy to find something that was easy and not too much of a headache. These cookies were easy to make, simple yet yummier & buttery!
I am always at a lookout for easy baking recipes and after searching for many recipes of eggless choco chip cookies I found this one much easier, though my daughter was not too happy with the color of these cookies as she expected a little dark brown color for them. But when she came back from school and shared how her entire class loved eating these, I was too happy and so was she :)! They came out crispy and not hard, I was too surprised how simple and nice they came out without using eggs.
Ingredients -
- Butter (Unsalted) – ½ cup (at room temp)
- Sugar (Granulated) – ¼ cup
- All-purpose flour -1 cup plus 1 tablespoon
- Vanilla Essence – 1 teaspoon
- Baking Powder – 1/8 teaspoon
- Choco chips (you can use chocolate pieces too) – ½ cup
- Walnuts (chopped) – ¼ cup
Method -
These cookies will take more time in baking as compared to other cookies but trust me the wait is worth it. To start preheat the oven to 150 C degrees and start with the rest of the process.
Take a big bowl, blend sugar & butter in it with the help of an electric mixer, mix until it turns light and creamy.Now add in the vanilla essence and mix well. I made these cookies in 3 batches (the measurement I have shared above will yield approx 12 cookies) and in one batch I added brown sugar and white sugar both in half & half ratio, these also turned out great. So choice is yours either use entire granulated sugar as per the measurement or else try it with brown sugar.
Sieve flour and baking powder together and add it to the butter & sugar bowl, beat it again until mixed. Use a spatula to mix the flour into the bowl. Use the electric mixer for just few seconds this time and then the last step is to add in the chocolate chips and the walnuts.
Use your hands to prepare the dough, it will be firm, you can keep this dough covered with a transparent wrap in a refrigerator for about 7 minutes.
After 7 minutes, take the dough out from the refrigerator and shape into lemon-sized balls. Flatten the cookies with your hands by pressing them from a top gently.You can use a cookie cutter too for giving different shapes. Take a baking tray, place a parchment paper and put the cookies on it 2 -3 inches apart. You need to bakes these for about 45 minutes until the edges turn little brown in color.
After 45 minutes, take them out, let them rest in the same tray for few seconds and then place them for cooling on wire rack for 5 -7 minutes.
Crispy eggless choco chips cookies ready!
