With this healthy and tasty combination recipe I start my Diet Recipe Section, I have been wanting to do this from long but it just got delayed. Hopefully will keep adding all that I cook for me when I feel its time to give my stomach a nice break from all the oily, spicy food and go for some real healthy options.
Brown rice with lots of veggies is a very healthy option when you intend to eat light yet nutritious.
Brown rice and white rice have similar number of calories and carbohydrates. The main differences between the two forms of rice lie in processing and nutritional content. When only the outermost layer of a grain of rice (the husk) is removed, brown rice is produced. To produce white rice, the next layers underneath the husk (the bran layer and the germ) are removed, leaving mostly the starchy endosperm. Several vitamins and dietary minerals are lost in this removal and the subsequent polishing process.
- Brown Rice – 1 cup
- Oil – 1 teaspoon
- Carrot – 2 sliced long
- Beetroot – 1 sliced long
- Sprouts – 1 handful
- Cabbage – 1/2 small bowl shredded
- Capsicum – 1 medium sliced long
- Bay Leaf – 1
- Cinnamon – 1 inch stick
- Cloves – 2-3
- Cumin Seeds – 1/4 teaspoon
- Salt to taste
- Red Chilli Powder – 1/4 teaspoon
Soak brown rice in 2-3 cups of water for an hour. Drain and set aside. Now take a pan, add 1 teaspoon oil(you can use olive oil also) and put bay leaf, cumin seeds, cinnamon,cloves and saute for one or two minutes.
Now add the drained rice to it and saute for another 2 -3 minutes, add 2 cups water to it and bring to boil, once the water start boiling add all the veggies to it and stir to mix well.Bring to another boil and reduce heat to low. Cover the pan and cook till done.
Serve hot with curd, mint chutney and enjoy this healthy delight!!
