Kopra Pak ( Coconut Burfi )raksha bandhan recipe

August 2nd is Raksha Bandhan. Raksha Bandhan is a Hindu festival celebrating the bond between a brother and a sister. This festival symbolizes the sister’s love and prayers for her brother’s well-being, and the brother’s lifelong vow to protect her. A thread is tied on the wrist of the brother by the sister and in turn the brother promises to take care of her forever (just a reiteration of what the brother is supposed to do any which ways :) ), followed by gifts from the brother to her dear sister, though I miss all the rakhi fun, one of the not so positive things of staying away from your home town!!!

This festival of Raksha Bandhan falls on the full moon day (Shravan Poornima), in the Shravan month according to the Hindu calendar. This is one of the special days where the markets are flooded with lots of Rakhi Stalls and Indian traditional sweets. I miss all the festivity of Delhi out here. In our childhood we all use to wait a lot for this festival and me and my brother use to wait for our other cousins to come at our place and we use to have a lot of fun. I dedicate this post to all my brothers at least they can enjoy this visual treat from me and enjoy my Kopra Pak Indian Sweet sitting in India and outside India :) .

This year I decided on making Kopra Pak also commonly known as coconut burfi. In Bangalore I have no limitations to enjoying coconut in any form hence this is the easiest and the yummiest Indian Sweet Recipe I could think of for my family.

I used fresh coconut for this recipe instead of desiccated coconut however you can use desiccated coconut if the fresh one is not available. This is a quick Indian Sweet option, but going by my experience while preparing this, only thing that needs to be taken care is that this burfi took long to set because I used fresh coconut, if you can’t wait and are in hurry you can simply refrigerate it for an hour or so and it’s done but I wanted more dry version of this so kept it in the refrigerator overnight and my kopra pak is ready to be used tomorrow.

Kopra Pak ( Coconut Burfi ) – for raksha bandhan

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 2 hours, 40 minutes

Yield: 10 pieces

Kopra Pak ( Coconut Burfi ) – for raksha bandhan

Ingredients

  • Fresh grated coconut – 2 cups
  • Powdered Sugar – 1 ½ cups
  • Milk – 1 teaspoon
  • Lemon Juice – 1 teaspoon
  • Ghee – 2 teaspoons
  • Safforn Strands (Kesar) – ¼ teaspoon
  • A pinch of turmeric
  • Cardamom Powder – ¼ teaspoon
  • Pistachios sliced – for garnishing
  • Water – 1 ¼ cups

Instructions

  1. Warm milk and add in the saffron stands, pinch of turmeric and keep aside.
  2. Blanch the pistachios and slice them, keep them for garnishing.
  3. Prepare the sugar syrup in a heavy bottom pan, by boiling water and sugar. Keep stirring in between; add the lemon juice to it when the mixture starts boiling.
  4. After adding in the lemon juice if you see the dust over the sugar syrup mixture then, remove it from spoon or strain the syrup if required.
  5. Keep boiling the sugar syrup mixture till it reaches the two thread consistency.
  6. Add the grated coconut, two teaspoon ghee (you can reduce it to one teaspoon if you wish to have less ghee in the sweet) and the saffron paste.
  7. Stir continuously and remove from the heat immediately.
  8. Grease a flat metal plate and spread the mixture on the plate. With the help of a spatula spread it evenly.
  9. Garnish it with cardamom powder and the sliced pistachios.
  10. Allow it to set and cool. Cut into desired shape and serve.

My favorite !! It has been years since I tied Rakhi or was home for Raksha Bandhan.. but the childhood memories of waiting for this festival are still fresh. I used to get a LOT of money from all of my big brothers..
