Mexican Salad with Cheese & Nacho Chips ~ Guest Post by Anshika Sharma

“A priceless princess┬áof your heart, when you smile she smiles, when you laugh she laughs, when you cry she has her eyes wet too! She looks into your eyes and she knows whatÔÇÖs going within you, she brightens up your days with her smiles and her laughs. I am blessed to have one! This is for you my adorable daughter ÔÇô Anshika….You are the best thing that can ever happen to me.┬áI love you more than words can express and I enjoy every moment of you in my life. God Bless you!” – From Maa

I never thought that so soon I will have this special person on my blog , the reason this particular blog was born is all because┬áof this very special adorable person in my life ÔÇô rather she is my lifeline :). I am sure few of you would have guessed by now and to those who still wonÔÇÖt know, the lifeline I am talking here is my daughter. Yes, I am excited about this one, because the guest I have today is none other but my Daughter – Anshika. Girls are the best gift of life and I am so┬áblessed to have her in my life, my strong support always. As days pass by this mother daughter bond is getting stronger.

I am so happy to share her first ever experiment in the Kitchen. A dish she made without any help and all by her own ( though like most of the mothers even I am too hyper on my kids entering the kitchen or trying to do something with certain kitchen equipments which is a BIG NO for them). Mexican Salad with cheese and Nachos

These day Parents are over conscious about their kids and kids have literally no time for themselves, after school activities whatsoever are also equally taxing for them. Where is the time, when the kids can creatively think or spend time with their own self, do things they simply love to do. Poor kids most of the time they are burdened by the homework and then followed by lots of other classes. Wish we can give our children some space and free time so that they can let their creativity flow without any pressure. I try to be nice but I have to admit that I am not very nice also when it comes to certain things related to my children.

Mexican Salad with cheese and Nachos

May be that’s┬áthe reason┬áwe don’t have Junior Masterchef┬áIndia series because here in India our children are so over burdened with studies and after school activities. We do not allow them to spend time in the kitchen or make them learn cooking at an early age like we see happening abroad, where the child is helped by grandmothers and mothers┬álearn various family traditional recipes. Sad but that’s the fact and most of us parents are┬águilty in some form or the others for our kids!

Ok :)!! Now coming back to this wonderfully precious┬ápost….

My little one is not so little now and with time I see her growing fast, sometimes I feel that time should stand still and my┬álittle angel remains as it is but all this is┬ánot possible nor in our control. She is a newbie teenager and is a grown up girl now. I still remember the very first day when I held her in my arms, my pink cute┬ádoll and see now here she is sharing her very first blog post in her mumÔÇÖs space :).

Mexican Salad with cheese and nachos

Till few months back I use to be really scared to even let her entre the kitchen forget about she touching or even trying to learn something in the kitchen but with time I have realised that we as parents need to understand and try build in that confidence in our kids that nothing is impossible if you hae the will and the passion to do it. We need to spend some quality time together, do things with them that they love to do. I still say to myself many a times that I need to STOP BEING A REAL POSSESSIVE MOM but somehow till date I am unable to digest this in me and I am over possessive mamma to both my children.

Recently my daughter picked up few cookbooks from Just Books for me but she ended up trying quite a few of them on her own and to my delight I was really pleasantly surprised. For the first time I felt my little girl has grown up now :), a mixed feeling for a mother!

I have been a big time fan of Tarla┬áDalal recipes and now my little daughter has become a big fan of her too, her “Magazine Cooking & More ” recent issue is the one she picked up and has already tried the delicious mouth-watering Mexican Salad with some changes to the main recipe on her own. The next for her to try is the Burger Pizza and some Xmas truffles :) !

Her exams are over and last weekend she was totally free to herself and do things she wanted to, lets see what she did in the kitchen then. Now over to my sweetie and hope you like her efforts :)!

Mexican Salad with cheese and Nachos, tatoos She loves doing craft, painting diyas, making rangoli’s┬áand getting tatoos!!!

Hi! I am Anshika┬áSharma, 13 years old and itÔÇÖs a great pleasure doing a guest post on my mumÔÇÖs blog, something very special for both of us. I love reading books; in fact I am a voracious reader. I have a huge collection of books and my┬áparents have always encouraged me in reading more and more┬ábooks. I love playing basketball and I am in my school basketball team┬áand have my own school jersey with my name on it. I love doing art and craft, make best things out of waste and I am highly obsessed┬áwith empty boxes and keep collecting them and then use them in my craft work. I can sit for hours working with colors, ribbons, boxes, craft papers ,scissors, beads, glitters┬áetc :)!

Mexican Salad with cheese and Nachos From her old art and craft collections!

ItÔÇÖs not like I have always been crazy about cooking, in fact I used to hate the word ÔÇÿcookingÔÇÖ! ┬áI have to admit this – I am a picky eater and my Mum goes real crazy feeding both me and my brother. I hardly help my mum in kitchen. ItÔÇÖs just recently that I have been inspired by my mum and the Masterchef┬áseries. I havenÔÇÖt missed a single episode of Junior Masterchef┬áAustralia. From┬áday one I had been supporting Greta and Indigo. But the dish I loved the most in the entire season was JackÔÇÖs cupcakes in Disneyland. I am a big chocoholic and I can have as many chocolates as you give me. I love cupcakes, cookies, cakes, brownies, ice creams, smoothies, mousse, truffles, milkshakes, pizza,┬á burgersÔǪÔǪÔǪÔǪÔǪ. And the list goes on and on and on. My Mum calls all this Junk but I love it :).

rangoli pic flower arragmentHer Peacock Rangoli for this Diwali and the flower arrangement prepared in School, won the first prize!

Recently I picked a cook book from┬ámy library for my mum and I happen to get inspired to cook few dishes from that. The very first dish I made┬ámyself without my MumÔÇÖs help is the one I am sharing here in my MumÔÇÖs blog. I really love having Mexican food and I love Nachos too. Taco Bells is one my favorite┬áplaces to be.

I really loved the colourful Mexican Salad with lots of cheese and Nachos. I made this dish for everyone on the weekend. I kept the basic recipe from the cookbook but changed it as per my taste by adding tomato basil salsa sauce and lots of cheese.

Mexican Salad with cheese and Nachos

So here I am sharing with you all the delicious Mexican crunchy Salad with cheese and NachoÔÇÖs and hope you like it and before that I will also like to say that I have the best Mum on┬áearth :), I love you Mum and thank you for this wonderful space for me, this will always be precious to me┬á:).

Good job Anshika and I m sure ur parents r really proud of u. Loved all ur art work, infact am thinking to send Riu whenever u r free so that U can be a source of inspiration to her. U know how kids look up to elder “didis”. Ha ha. The photographs look very colourful, tempting. Will try this recipe for sure. Somehow I missed this earlier when u posted it Anamika, but good that I saw it today. Happy cooking…
