Quick and easy , hasslefree..these fries can be prepared by anyone as needs no rocket science….easy cooking and handy recipe for navaratri fasting days….you can spice this up by adding various things to it… I prefered oregano and basic spices with a touch of lemon juice…….
- Potatoes – 4 large-sized cut into strips
- Oil for deep-frying
- Oregano – 1 tablespoon
- Lemon Juice – 1 spoon
- Salt to taste
- Red chilli powder – 1/2 teaspoon
Wash potatoes, cut them on a chopping board into strips of about 1/2 inch thickness and width. Soak these potatoes in ice-cold water at room temperature for about an hour , I kept for a little longer time because had to finish some other urgent work and that’s fine if you also keep them little longer due to some other committment.
When you are about to fry them, remove them from water, drain them well and dry them on a paper towel or tissue.
Now heat oil in a kadai, when the oil is hot add the potatoes strips to it and let it fry on medium to high flame. Fry for about 5 – 7 minutes or till they are little golden brown. Keep changing the sides. Remove them from the kadai, drain them on tissue paper and sprinkle oregano, red chilli powder and salt to it, add lemon juice as per taste.
Serve them hot with tamarind chutney!
