A simple yet easy to cook recipe …. trust me it taste yummy, in one sabzi you get the taste of two.. the potatoes and the okra .
- Bhindi (Okra) – 500 grms
- Potatoes – 3 medium
- Salt to taste
- Red Chilli powder
- Garam Masala – 1/2 teaspoon
- Amchur Powder (Dry Mango Powder)- 1/2 teaspoon
- Dry dhaniya powder – 1 tablespoon
- Haldi(turmeric) powder – 1/2 teaspoon
Wash and dry the bhindi (okra) and slit it from one side from top to bottom,(cut a small portion of the bhindi from both top and end before slitting it long side). Keep aside for 7 -10 minutes and let it dry. Peel and chop the potatoes into cubes.
Now mix all the dry masala(except amchur and dry coriander powder) and put them in the bhindi with your hands and fill it nicely(stuff them). Take a kadai,heat oil in it and add potatoes,let them simmer on low flame for 5 minutes and then add to them the masala stuffed bhindis(okra). Close the lid and let it saute on low flame for 7-10 minutes. Keep checking in between ones or twice so that the sabzi doesn’t stick to the bottom of the kadai.Do not mix too much because the bhindi will break as will be soft on cooking.
When both cooked,add amchur powder and dry coriander powder to the veggie. Can be served as a side dish or else I love to eat this with curd and rotis.
